Macarons

I have to admit I know nothing about macarons. But my sister made the best macarons. I even learnt the word macarons from her. She told me the "skirt" of the macarons actually indicates the macarons are baked right. These looks so good aren't they?

There are liquorice flavour, mandarin orange, caramel, white chocolate, pistachio, lemon, hazel nut, raspberry, lychee etc. The choices are endless to your imagination even champagne flavour. There are also salty savoury flavour macaron for example macaron au foie gras.

I am somebody who needs to visualized a recipe instead of reading a recipe. So I have illustrate a recipe for dummies just for myself and of course to share with anyone who find it useful.

The technique of mixing, I learnt is called the macaroner. So happy macaroner-ing!

  4. The skirt is the rim on the bottom of the meringue. Think mushroom with a big stipe.

  5. This is a simple chocolate flavour macaron recipe. There are many macaron recipes out there of all kinds of flavours. You can let your imagination run wild. You could replace chocolate powder to liqourice powder, ground pistachio, mandarin syrup etc etc. Same goes with the filling , the choices are endless like lemon curd, strawberry jam, foie gras etc. I could write a book about it if I collected all the recipes out there, don't you think? Happy exploring!

  7. Almond flour is actually ground almond. Almond ground into fine texture with out skin. Some supermarket sell them,
    . I bought mine from a market.

The thick cream here is creme fraiche.
